The Humphead Snapper or bordomar can be easily identified by its large size, thick lips, two black lines behind its eyes, and the hump that appears on the forehead of larger adults. The general body colour is bright red with silvery reflections. It is usually fished outside the reef and is one of the most sought after fish.
The flesh which is white and moist has large flakes and is mild in flavour, almost the same texture as that of the Red Emperor and at times used as a close replacement.
The firm flesh of the bordomar is suited to cooking methods such as steaming, poaching, and grilling or pan frying. It is customary over the islands to usually grill it whole. The head makes a great fish soup with bilimbi.
