Palm heart or palmist is the tender shoot at the crown of the coconut palm tree. The entire tree is sacrificed to obtain the palm heart; hence the reason why the salad made from the heart is locally called “millionaire salad”.
Layers of the trunk-like crown are peeled away until the precious ivory-coloured core, about 2/3 meter long, is reached. The flesh is firm, crisp and delicate beyond description.
It is either sliced thinly for a salad or in cubes when cooked. Palm heart can also be obtained from other palm trees but the flavour of the coconut palm heart is far superior. It can now be obtained in tins, but of significantly inferior quality.
