Curry powder is in itself not a spice, but a blend of different spices. Contrary to common belief, hotness is not an essential feature of curry powder. But if we do want to obtain a hot curry powder, hotter spices such as dried chilli can be added to the mix. Curry powder consists of a blend of the following spices: tumeric, cumin, coriander, ginger, cinnamon, fenugreek, chilli, cardamom, mace, mustard, cloves and poppy seeds. All of these spices are ground and blended according to taste.
Different types of curry powder will contain different doses of these spices.The curry powder used by the creole cook has a lower ratio of cloves and cardamom and a higher ration of cumin and turmeric.
Curry powder is usually kept in an airtight container and will store for a long time, improving over time as each spice blends with each other.
