Sweet & Salty Salads
The Seychellois Creole cookery has two different types of salad. The main difference lies in whether salt or sugar is added.
When salt is added to a salad it is usually consumed with a main meal. On the other hand when sugar is added, it is usually served at around three o'clock in the afternoon with afternoon tea. In most cases this sweet salad will also be flavoured with cracked pepper and chilli. It is a very refreshing style of salad.
The creole cook's salads are usually very simple and wholesome. He does not usually use any thick dressing in his salads. The base of the vinaigrette is simply oil, lime juice (or lemon juice, toddy vinegar or any type of vinegar) salt and cracked pepper. Mayonnaise based dressings do not feature in the traditional Seychellois Creole cuisine.
