Jobfish are a quite slender with almost a cylindrical or torpedo like body. The body colour is predominantly olive to dark green on top, while the underside is paler. They are a very powerful fish and tenacious fighter once hooked. The two main types of jobfish that are frequently caught are the green jobfish or zob gri and the ornate job fish or Job Zon (or jaune in French, meaning yellow). They have a mild, sweet flavour, low oiliness and moist, soft-medium flesh.
The job zon is the preferred of the two because the flesh has a nicer texture. They are ideal fish to poach, grill, bake or fry.
