The star fruit or five corners is a fruit with five wedged sides. It has not been widely used in Creole cooking until a few years ago when it started to gain popularity.
It is mainly used in fresh fruit salad where it provides a wonderful contrast in taste and texture. When used in fruit salad it is essential to cut the tips of the wedges off because this is where most of the oxalic acid is concentrated.
The removal will enhance the flavours of the salad. It is also made into jams and produces a honey like jam. The fruit got its name from ‘Carambola’ which is one of a few Indo-Portuguese Creole words we have inherited.
